Life at Home: How to Quickly Cook SAVORY EGGS with Ingredients you Have on Hand

I’m going to say we are approximately on about Day 20 of our “life at home”. Our schedule really started to change for us around March 13th with my granddaughter not going to daycare anymore and my husband working from home full time (not traveling at all or going into the local office).

In the few moments of downtime I’ve been mostly cleaning up the messes of a toddler and two dogs plus countless eat at home meals.

I’m going to use this time to document some of our at home projects, cooking, organizing and whatever we end up doing at home to make our home healthy, happy, beautiful, and safe for us during this unprecedented time.

I’d like this to be a journal of sorts of what we do and learn and accomplish around our home during this time. I love creating home but I also love enjoying home and want every space and room and meal a place we can enjoy each other and savor. These entries won’t be perfectly written, perfectly edited, and the pictures will hardly be perfect but I’ll learn along the way and will be glad to have this messy middle to look back on.

One of the goals I had for 2020 was to be more intentional about cooking and eating at home but especially trying new recipes. When life is busy, this becomes extremely difficult unless I am very intentional about making a plan, having ingredients, and sticking to it but being within walking distance to many small local restaurants, I use the excuse to support them and not cook. The social distancing and staying at home is forcing us to cook more meals at home and I really do enjoy finding and cooking new things, especially when the ingredients are things I already have on hand.

Ingredients needed:

  • Number of eggs you want to make (separated)
  • Additions to your eggs (herbs, vegetables, meat, cheese)
  • Salt, pepper & other spices you enjoy with Eggs

I used 4 eggs and fresh rosemary (cut into small pieces with kitchen shears) & diced tomatoes, onion relish and sautéed onions from the previous night’s dinner. I substituted Bragg’s Nutritional Yeast for the cheese because I am dairy free.

Step 1: Preheat the Over to 450 degrees F, separate the eggs and beat the whites to form stiff peaks

Step 2: Add in herbs, meats, vegetables and cheese.

Add your additives and separate into the number of eggs you used on a sheet pan.

Step 3: Divide your stiff egg whites, with all your added ingredients gently folded in, onto a sheet pan into the number of eggs you used. Make a well to add the yolks later (not shown).

Step 4: Bake at 450 for 3 minutes.

Step 5: Add the egg yolks to the center well and bake another 3-5 minutes until the yolks are the consistency you like.

Return to 450 degree F oven for 3-5 minute or until the yolk are cooked to desired doneness

Step 6: Season with Salt & Pepper or other spices and ENJOY!

I am dairy free and try to avoid wheat as much as possible. This egg dish is very filling and stretches the egg to fill like a much large and substantial dish without having to add bread as a side.

Thankfully we are able to go out to the store occasionally and pick up needed items but we are trying to limit those trips. We restocked on fresh berries yesterday so it was a treat to pair them with the savory eggs for a simple breakfast.
